INGREDIENTS 

FOR THE BATTER:

  • 1 cup spelt, white, gf, or oat flour
  • 1 scoop Happy Way Vegan Vanilla Protein Powder
  • 3/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup brown sugar
  • 1/3 cup white sugar
  • 2 tbsp cornstarch
  • 2/3 cup mini chocolate chips, optional

FOR THE LIQUID MIXTURE: 

  • 1 cup water
  • 1 Tbsp vanilla extract
  • 2/3 cup oil

METHOD

  1. Whisk the liquid mixture ingredients, then set aside.
  2. Preheat oven to 160C. Prepare an 8×8 pan with baking paper, set aside. 
  3. In a large mixing bowl, stir all dry ingredients. Then stir in the liquid ingredients to form a brownie batter.
  4. Smooth evenly into the pan. Bake 16 minutes. The brownies should look underdone when they come out.
  5. Serve with chocolate ganache and decorate with sprinkles (optional)
  6. Let cool and slice to serve and enjoy!
