INGREDIENTS 

  • 250g unsalted butter, softened 
  • ½ cup Biscoff spread, melted
  • 1 scoop Happy Way Caramel Biscuit Whey Protein Powder 
  • ½ cup brown sugar 
  • ¼ cup white sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • 1 & ⅓ cup plain flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 3 Biscoff cookies, crushed
  • ¾ cup white chocolate chips
  • 5 Biscoff cookies split in half for topping (optional)

METHOD

  1. Preheat oven to 180C and line a baking tray with baking paper. 

  2. In a medium-sized bowl, cream the butter, Biscoff, and sugars together until smooth. Add in the egg and vanilla and mix just until combined.

  3. Mix in the dry ingredients and mix until the flour mixture disappears. Fold in the white chocolate chips then using a large cookie scooper, scoop out 10  cookie dough balls, and freeze for 10 minutes.

  4. Bake for 11 minutes. Once the cookies come out of the oven, gently press the  Biscoff cookie in the centre and allow to cool.

  5. Enjoy with a cup of cold milk!
