▫️1 tbsp olive oil
▫️1 stalk celery, chopped
▫️1 carrot, chopped
▫️1 brown onion, chopped
▫️4 cloves garlic
▫️1/3 cup parsley
▫️2 potatoes, peeled and chopped
▫️1 kg pumpkin, peeled and chopped
▫️1 tsp ground cumin
▫️1L of vegetable stock
▫️1 @happywayau sachet flavourless collagen beauty dust
▫️200mL of coconut cream + 1-2 tbsp for drizzle on top of soup
▫️Prepare all ingredients by peeling and chopping all veggies.
▫️In a saucepan over medium heat, add the olive oil followed by onion and garlic. Add in all remaining ingredients, pop the lid on and allow to gently simmer for 30-45mins until all veggies have become tender. Season well with salt and pepper.
▫️To ensure your soup is nice and thick you may want to scoop out 1-2 cups of the liquid. Using a sick blender, blend until smooth and creamy. Pour into bowls and using a teaspoon add the coconut swirl. Enjoy warm with a slice of toasted bread.
