INGREDIENTS 

  • 115g ripe banana, mashed 
  • 1 egg
  • 3 tbsp milk of choice
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 90g rolled oats
  • 60g plain flour
  • ¼ tsp ground cinnamon
  • 1 serving of Happy Way Banana Protein Powder
  • 20g flaked coconut
  • 40g walnuts, chopped
  • 50g raisins
  • Pinch of sea salt

METHOD

  1. Preheat your oven to 175°C. Line a baking tray with parchment paper.
  2. In a large mixing bowl, whisk the mashed banana, egg, milk, olive oil and maple syrup. 
  3. Add the rolled oats, flour, cinnamon, protein, coconut, walnuts, raisins and salt and mix until evenly mixed.
  4. Use a tablespoon to scoop out the batter and place it onto the lined baking tray. Gently press each scoop to flatten slightly. 
  5. Bake for 9-11 minutes, or until lightly golden, then cool on a wire rack and enjoy!
