METHOD

  1. In a blender combine the coconut, raspberries, super reds, protein powder, coconut milk and maple syrup. Run until well combined. If the mixture is too wet, slowly add more desiccated coconut. Leave the mixture for 10-20 minutes (this will help to keep the mixture stick together)⁣.
  2. Shape the mixture into balls and arrange them on a baking tray covered with baking paper. Place in freezer for 10-15 minutes.⁣
  3. In the meantime melt the chocolate in the microwave, using 30 second intervals so it doesn't overcook. 
  4. Dip each ball into melted white chocolate and then coat with desiccated coconut.
  5. Refrigerate until set. Store in fridge for up to 5 days. ⁣
