SUPER RAFAELLO PROTEIN BALLS
INGREDIENTS
- 200g desiccated coconut
- 1/2 cup full fat coconut milk, discard the watery part (you can use in smoothies etc)
- 30g Super Reds Powder
- 30g I Love You Berry Much Protein Powder or Vanilla Protein Powder
- 1/2 cup of raspberries
- 2 tbsp maple syrup
- 200g white chocolate, melted
- 50g desiccated coconut, for the outside
METHOD
- In a blender combine the coconut, raspberries, super reds, protein powder, coconut milk and maple syrup. Run until well combined. If the mixture is too wet, slowly add more desiccated coconut. Leave the mixture for 10-20 minutes (this will help to keep the mixture stick together).
- Shape the mixture into balls and arrange them on a baking tray covered with baking paper. Place in freezer for 10-15 minutes.
- In the meantime melt the chocolate in the microwave, using 30 second intervals so it doesn't overcook.
- Dip each ball into melted white chocolate and then coat with desiccated coconut.
- Refrigerate until set. Store in fridge for up to 5 days.
