INGREDIENTS

1/2 cup of plain flour
- 3/4 cup of almond flour
- 1/4 cup of Happy Way Flavourless Protein Powder
- 1/4 cup of classic monkfruit sweetener
- 1 tsp baking powder
- 2 super ripe bananas, mashed
- 1/4 cup of plant based milk (I used oat milk)
- 2 eggs
- White choc chips
Strawberry frosting:
- 3 - 4 heaped tbsp of a thick Greek yoghurt
- 30g of Happy Way Strawberry Protein Powder
- Handful freeze dried strawberries
- Handful of flakes almonds
METHOD
- In a bowl, mash the bananas, then add in the eggs and milk. Mix until combined.
- Add remaining ingredients and gently bring the mixture together. Pour into a lined square brownie tin.
- Bake for 25 mins or until cooked at 180°C. Allow to cool.
- Top with strawberry frosting: mix yoghurt & protein until smooth. Add half the freeze-dried strawberries and mix again.
- Add the remaining freeze-dried strawberries and flaked almonds.
- Cut into squares and ENJOY!! 🍓
