The best gingerbread men you’ll ever have and so easy to gift!

INGREDIENTS

  • 125g room temperature salted butter
  • 160g smooth Biscoff spread
  • 100g brown sugar
  • 175g golden syrup
  • 1 egg yolk
  • 420g plain flour
  • 30g Caramel Biscuit Protein Powder
  • 1 tbsp ground ginger
  • 1 tsp mixed spice
  • 1 tsp bicarbonate of soda

 

METHOD

  1. Use a stand mixer fitted with the paddle attachment to beat the butter, Biscoff spread and sugar until pale and creamy. Add golden syrup and egg yolk and beat until combined. Mix in the flour, protein, ginger, mixed spice and bicarb. Turn onto a lightly floured surface. Divide in half. Knead each piece until smooth. Press into discs, cover with plastic wrap and place in the fridge for 30 minutes.
  2. Preheat an oven to 180C/160C fan forced. Grease 2 baking trays. Line with baking paper
  3. Place a disc of dough between 2 sheets of baking paper and roll out to around 4mm thick. Use a gingerbread man pastry cutter to cut out shapes. Arrange on prepared trays. Re-roll any remaining dough
  4. Bake in a preheated oven for 10 minutes or until browned. Transfer to a wire rack to cool. Repeat with any remaining uncooked biscuits.
