INGREDIENTS

500g ground chicken
- Zest of 1/2 lemon
- 1 tbsp lemon juice
- 3 garlic cloves, minced
- Handful of chives, chopped
- 2 tsp dried thyme
- Mini tortillas
- Salt and black pepper, to taste
- 1/2 cos lettuce, chopped
- 1/3 cup Caesar salad dressing
- 1 scoop Happy Way Flavourless Protein
- 1/2 cup grated parmesan cheese

3 tbsp bacon, diced
METHOD
- Add mince to a bowl and mix well with the zest, juice, garlic, thyme, salt/pepper and chives.
- Spread 1 tbsp of the mince mixture onto a tortilla until evenly distributed.
- Lay the tortilla (meat side down) onto a frypan. Cook until the meat is cooked and the tortilla is crispy and golden brown
- Add protein to the salad dressing and mix until combined.
- Top the tacos with salad and dressing and enjoy!
