1. Place all ingredients (minus the coconut oil) in a food processor and blend until smooth.
  2. Add some coconut oil in pan if required, and pour in the smooth pancake mixture evenly.
  3. Flip when pancakes begin to bubble and repeat for the remaining mixture.
  4. Top with desired toppings—we used strawberries, blueberries and natural maple syrup!
