
DOUBLE CHOC CHIP PROTEIN COOKIES
INGREDIENTS
- 125g unsalted butter, cold & cubed
- 90g brown sugar
- 70g caster sugar
- 1 egg
- 190g plain flour
- 60g Happy Way Double Choc Chip Protein Powder
- 30g cocoa powder
- ½ tsp baking powder
- ½ tsp bicarb soda
- Pinch of salt
- 100g white chocolate chips
- 100g dark or milk chocolate chips
- 50g macadamias, roughly chopped (optional)
METHOD

Place the cubed butter, brown sugar and caster sugar in the bowl of your electric mixer. Mix on medium-high speed for 4-5 minutes, or until the mixture is creamed and pale in colour.

Add the egg and mix until combined. Add the flour, protein powder, cocoa, baking powder, bicarb soda and salt. Mix on low speed until just combined. Stir in the chocolate chips and macadamias. You may need to use your hands for this part as the dough will be quite firm.

Divide the dough into 10 equal balls and place 5 on each lined baking tray. Bake for 11-12 minutes, or until slightly set on the edges but still soft in the centre. Remove from the oven and cool on the baking tray for 30 minutes. Enjoy warm, or store in an airtight container for up to 5 days.
