INGREDIENTS 

  • 1 egg
  • 1 tsp vanilla extract
  • 120ml olive oil
  • 150g caster sugar
  • Zest and juice of 2 lemons
  • 1 tbsp poppy seeds
  • 180g plain flour
  • 60g Happy Way Vanilla Protein Powder
  • 3 tsp baking powder
  • Pinch of salt
  • 120ml milk of choice

METHOD

  1. Preheat the oven to 180°C and line a muffin tin with 12 liners. In a large bowl, whisk together the egg, vanilla extract, olive oil, sugar, lemon juice and lemon zest until smooth.
  2. Stir in the flour, protein powder, baking powder, salt and poppy seeds. Gradually add the dry ingredients into the wet mixture, stirring gently. Pour in the milk and mix until just combined.
  3. Evenly divide the batter among the muffin liners, filling each about ¾ full. Bake for 15-17 minutes or until lightly golden. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack
