MATCHA TIRAMISU

INGREDIENTS

  • 3 egg yolks⁠
  • ⅓ cup (75 g) granulated sugar⁠
  • 2 cups mascarpone cheese⁠
  • 300 ml heavy cream⁠
  • ¼ teaspoon salt⁠
  • 300 g soft ladyfingers⁠
  • 1 tbsp Happy Way Matcha Powder⁠
  • 1½ cups hot water⁠
  • 1 tablespoon honey⁠
  • 1 cup fresh sliced strawberries⁠

METHOD

  1. Mix matcha with a splash of hot water to make a smooth paste. Add the rest of the water + honey, then set aside to cool.⁠
  2. Beat egg yolks + sugar until pale, then add mascarpone and mix until smooth. Whip your cream with a pinch of salt and gently fold it into the mascarpone mix.⁠
  3. Dust your dish with a little matcha powder, then quickly dip ladyfingers in the cooled matcha mix (1–2 seconds each side) and line them up.⁠
  4. Spread half the mascarpone cream, top with sliced strawberries, then repeat. ⁠
  5. Dust with extra matcha, pop it in the fridge for 4–6 hours and enjoy!
