INGREDIENTS

3 egg yolks
- ⅓ cup (75 g) granulated sugar
- 2 cups mascarpone cheese
- 300 ml heavy cream
- ¼ teaspoon salt
- 300 g soft ladyfingers
- 1 tbsp Happy Way Matcha Powder
- 1½ cups hot water
- 1 tablespoon honey
- 1 cup fresh sliced strawberries
METHOD
- Mix matcha with a splash of hot water to make a smooth paste. Add the rest of the water + honey, then set aside to cool.
- Beat egg yolks + sugar until pale, then add mascarpone and mix until smooth. Whip your cream with a pinch of salt and gently fold it into the mascarpone mix.
- Dust your dish with a little matcha powder, then quickly dip ladyfingers in the cooled matcha mix (1–2 seconds each side) and line them up.
- Spread half the mascarpone cream, top with sliced strawberries, then repeat.
- Dust with extra matcha, pop it in the fridge for 4–6 hours and enjoy!
