INGREDIENTS 

  • 12 medjool dates, soaked for 10 mins 
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup almond meal
  • 1 cup walnuts, crushed 
  • 1 scoop Happy Way Vegan Triple Choc Fudge Protein Powder 
  • 1/4 cup + 1 tbsp cacao powder
  • 2 tbsp almond milk
  • Crushed walnuts, for topping

FOR THE CHOCOLATE FROSTING

  • 80g melted dark chocolate 
  • 2 tbsp almond milk mixed together

METHOD 

  1. Blend the dates, maple syrup, and vanilla in blender or food processor until a paste forms.
  2. Transfer into a large mixing bowl along with the other remaining ingredients and mix until a thick mixture forms. 
  3. Press into a lined tray, smooth over with a damp spoon as it will be quick sticky.
  4. Spread over chocolate frosting and sprinkle with more crushed walnuts.
  5. Place in the freezer for minimum of 3 hours before slicing and enjoy!
