
Raw Chocolate Protein Cake Pops
- 1/2 cup of cashews
- 1/3 cup of almond meal
- 1/2 cup of almonds
- 2 tbsp of @happywayau vegan chocolate protein powder
- 2 tbsp of raw cacao powder
- 1/3 cup of pitted dates
- 1 tsp of vanilla paste
- 4 tbsp of water
- 1 tbsp of coconut oil
- Pinch of salt
Chocolate coating:
- 1/2 cup of coconut oil
- 1/3 cup of cacao
- 2 tbsp of maple syrup
- Pinch of salt
- Mix all the cake filling ingredients together in a food processor starting with the nuts and finishing with the water. Adding less or more if required.
- Once finely processed, roll balls of the size of table tennis balls with your hands and poke a skewer in each of them.
- Place them in the freezer to set for 15 minutes.
- Make the chocolate coating by mixing the ingredients in a bowl and dip each cake pop in it coating all or part of the cake pop. Dip in desiccated coconut or nuts before the coating sets.
- Place the cake pops in the fridge in a jar to set the chocolate coating.
