RAW CHOCOLATE PROTEIN CAKE POPS
INGREDIENTS
- 1/2 cup cashews
- 1/3 cup almond meal
- 1/2 cup almonds
- 1 scoop (30 g) Happy Way Choc Pea Princess Vegan Protein Powder
- 2 tbsp Happy Way Organic Cacao Powder
- 1/3 cup pitted dates
- 1 tsp vanilla paste
- 4 tbsp water
- 1 tbsp coconut oil
- Pinch salt
FOR THE COATING:
- 1/2 cup coconut oil
- 1/3 cup Happy Way Organic Cacao Powder
- 2 tbsp maple syrup
- Pinch salt
METHOD
- Mix all the cake filling ingredients together in a food processor, starting with the nuts and finishing with the water, adding less or more if required.
- Once finely processed, roll balls the size of table tennis balls with your hands and poke a skewer in each of them.
- Place in the freezer on a tray to set for 15 minutes.
- Make the chocolate coating by mixing the ingredients in a bowl and dip each cake pop in it coating all or part of the cake pop. Dip in desiccated coconut or nuts before the coating sets.
- Place the cake pops in the fridge in a jar to set the chocolate coating and enjoy!
