WHITE CHOC RASPBERRY PROTEIN CHEESECAKE

INGREDIENTS 

  • 1x 160g vanilla yoghurt
  • 1 scoop Happy Way White Choc Raspberry Protein
  • Handful of sugar-free white choc chips
  • 200g cottage cheese
  • 2 eggs
  • ¼ cup sugar-free maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp cornflour
  • ½ cup frozen raspberries

METHOD 

  1. Preheat oven to 160C and prepare a tray with baking paper. Set aside.
  2. Add all the ingredients to a bowl/blender (excluding raspberries and white choc chips) and mix until combined.
  3. Pour the mixture into the tray and top with raspberries and white chocolate chips.
  4. Bake for 40-45 minutes or until a skewer comes out clean. Allow to cool for 10 minutes before refrigerating for at least an hour and slice to enjoy!
