4-INGREDIENT STRAWBERRY MATCHA PROTEIN MOCHI BITES

INGREDIENTS 

Optional ingredients: 

Happy Way Matcha Powder to dust ⁠

Monk Fruit/natural sweetener ⁠

Strawberries⁠

METHOD 

  1. Combine the rice flour, protein powder (and matcha + monk fruit) and water in a mixing bowl until well combined.⁠
  2. Microwave the mixture for 1 minute, stir, then microwave for another 1 minute, stir again, and finally microwave for 30 seconds, stirring between each interval.⁠
  3. Transfer the mixture onto a board dusted with cornstarch. Allow it to cool before shaping the mochi (if you’re not using strawberries, you can enjoy it as is!).⁠
  4. Shape into 4 circles, add strawberries to the centre, then wrap them up. Enjoy!
