INGREDIENTS
- ½ cup of glutinous rice flour
- 3 tbsp Happy Way Matcha Latte Vegan Protein Powder
- 1/3 cup of water
- Corn-starch to dust
Optional ingredients:
Happy Way Matcha Powder to dust
Monk Fruit/natural sweetener
Strawberries
METHOD
- Combine the rice flour, protein powder (and matcha + monk fruit) and water in a mixing bowl until well combined.
- Microwave the mixture for 1 minute, stir, then microwave for another 1 minute, stir again, and finally microwave for 30 seconds, stirring between each interval.
- Transfer the mixture onto a board dusted with cornstarch. Allow it to cool before shaping the mochi (if you’re not using strawberries, you can enjoy it as is!).
- Shape into 4 circles, add strawberries to the centre, then wrap them up. Enjoy!
