INGREDIENTS 

  • 3 mashed bananas
  • 1 egg
  • 40g yoghurt
  • 60ml oil
  • Vanilla extract
  • 120g flour
  • 1 tsp baking powder
  • 1/2 baking soda
  • 1 tsp cinnamon powder
  • A pinch of nutmeg

FOR THE FROSTING 

METHOD 

  1. Mix bananas, egg, yoghurt, oil and vanilla extract with a whisk.
  2. Add dry ingredients and mix just to combine everything.
  3. Bake in a muffin tin, in 220C for 15 minutes.
  4. Prepare frosting by mixing yoghurt with protein powder. Add cream cheese and tahini if using. Mix until smooth.
  5. Pipe onto the muffins once cooled and enjoy!
