INGREDIENTS
- 2 cups almond flour
- 1 scoop Happy Way White Choc Caramel Whey Protein Powder
- 1/3 cup maple syrup
- 1/4 cup coconut oil
- 1/4 cup peanut butter
- 2 eggs, room temp
- 1 tsp almond extract
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup sprinkles, plus more to top
- White choc chips, optional
METHOD
- Preheat the oven to 175°C.
- In a large bowl, whisk together: eggs, peanut butter, coconut oil, maple syrup, vanilla and almond extract.
- Add the dry ingredients: almond flour, protein, salt, baking soda, sprinkles and choc chips. Mix well until a smooth batter forms.
- Line a square pan with baking paper and add the blondie mixture to the pan. Add extra sprinkles on top.
- Bake for 18-20 minutes or until a skewer comes out completely clean. Let cool and slice to enjoy!
