INGREDIENTS 

  • 2 cups almond flour
  • 1 scoop Happy Way White Choc Caramel Whey Protein Powder
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1/4 cup peanut butter
  • 2 eggs, room temp
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup sprinkles, plus more to top
  • White choc chips, optional

METHOD 

  1. Preheat the oven to 175°C.
  2. In a large bowl, whisk together: eggs, peanut butter, coconut oil, maple syrup, vanilla and almond extract.
  3. Add the dry ingredients: almond flour, protein, salt, baking soda, sprinkles and choc chips. Mix well until a smooth batter forms.
  4. Line a square pan with baking paper and add the blondie mixture to the pan.  Add extra sprinkles on top.
  5. Bake for 18-20 minutes or until a skewer comes out completely clean. Let cool and slice to enjoy!
