BLUEBERRY PANCAKES
- 50g Rolled Oats
- 100g Blueberries (fresh or frozen)
- 1 egg
- Splash of water
- 10g Stevia
- 30g Berry Happy Way
- Coconut Oil for pan (optional)
- Place all ingredients (minus the coconut oil) in a blender or food processor until smooth
- Place desired amount of coconut oil in pan if required, and pour in smooth pancake mixture evenly.
- Flip when pancakes begin to bubble and repeat for remaining mixture
- Top with desired toppings - I used plain greek yoghurt mixed with organic coconut syrup (yum!)
