INGREDIENTS
- cups almond meal
- ¾ cup full fat Greek yoghurt
- 2 large eggs
- ⅓ cup maple syrup
- 30 g of Happy Way vanilla protein powder
- 1 tsp vanilla extract
- 1 tsp baking powder
- ¼ tsp baking soda
- Pinch of salt
- ½ cup fresh or frozen blueberries (extra for topping).
METHOD
- Preheat the oven to 180°C (fan) and line a muffin tray.
- Whisk yoghurt, eggs, maple syrup and vanilla until smooth.
- Add almond meal, protein powder, baking powder, baking soda and salt. Stir gently.
- Fold through blueberries.
- Divide evenly into 8 muffin cases.
- Bake for 22–26 minutes, until just set.
- Cool for 10 minutes before eating (they firm up as they cool).
