BLUEBERRY PROTEIN MUFFINS

INGREDIENTS

  • cups almond meal⁠
  • ¾ cup full fat Greek yoghurt⁠
  • 2 large eggs⁠
  • ⅓ cup maple syrup⁠
  • 30 g of Happy Way vanilla protein powder ⁠
  • 1 tsp vanilla extract⁠
  • 1 tsp baking powder⁠
  • ¼ tsp baking soda⁠
  • Pinch of salt⁠
  • ½ cup fresh or frozen blueberries (extra for topping). ⁠

METHOD

  1. Preheat the oven to 180°C (fan) and line a muffin tray.⁠
  2. Whisk yoghurt, eggs, maple syrup and vanilla until smooth.⁠
  3. Add almond meal, protein powder, baking powder, baking soda and salt. Stir gently.⁠
  4. Fold through blueberries.⁠
  5. Divide evenly into 8 muffin cases.⁠
  6. Bake for 22–26 minutes, until just set.⁠
  7. Cool for 10 minutes before eating (they firm up as they cool).⁠
