INGREDIENTS
- 1 1/2 cups of soy protein crisps
- 2 scoops Happy Way Choc Cherry Protein Powder
- Dark chocolate melts
- Mini sugar-free marshmallows (optional)
- 1/3 cup shredded coconut
- 1/3 dried or glace cherries, roughly chopped
- Cherry Ripe chocolate, roughly chopped
METHOD
- In a large bowl, combine soy protein crisps, protein powder, marshmallows (if using), coconut, and cherries.
- Melt 200–225g of chocolate melts in the microwave, then pour over the bowl and mix until everything is evenly coated.
- Transfer the mixture into a lined tray, pressing down firmly and smoothing the top.
- Melt extra chocolate and drizzle it over the top of the rocky road.
- Sprinkle with extra coconut, cherries, and Cherry Ripes, then refrigerate until set.
- Slice, serve, and enjoy your protein-packed treat!
