CINNAMON BUN BAKED OATS

INGREDIENTS

For the base:

  • 1 ripe banana, mashed⁠
  • 115g rolled oats⁠
  • 1 tsp ground cinnamon⁠
  • 215ml milk of choice⁠
  • 2 tsp vanilla extract⁠
  • 1 tbsp maple syrup⁠
  • ½ tsp baking powder⁠
  • 1 egg⁠
  • Pinch of salt⁠
  • 40g walnuts or pecans, roughly chopped⁠

For the topping:

METHOD

  1. Preheat oven to 180°C. In a bowl mix banana, milk, vanilla, maple syrup + egg until smooth.⁠
  2. Stir in oats, nuts, cinnamon, baking powder + salt.⁠
  3. Divide into 3 oven-proof containers and bake for 20–25 mins (until just set).⁠
  4. Mix yoghurt + protein powder until smooth.⁠
  5. Once oats have cooled slightly, top with protein yoghurt.⁠
  6. Microwave Biscoff/almond butter for 10–15 secs, drizzle on top, and enjoy!
