INGREDIENTS
For the base:
- 1 ripe banana, mashed
- 115g rolled oats
- 1 tsp ground cinnamon
- 215ml milk of choice
- 2 tsp vanilla extract
- 1 tbsp maple syrup
- ½ tsp baking powder
- 1 egg
- Pinch of salt
- 40g walnuts or pecans, roughly chopped
For the topping:
- 300g Greek yoghurt
- 30g Happy Way Cinnamon Bun Protein Powder
- 3 Tbsp Biscoff or almond butter
METHOD
- Preheat oven to 180°C. In a bowl mix banana, milk, vanilla, maple syrup + egg until smooth.
- Stir in oats, nuts, cinnamon, baking powder + salt.
- Divide into 3 oven-proof containers and bake for 20–25 mins (until just set).
- Mix yoghurt + protein powder until smooth.
- Once oats have cooled slightly, top with protein yoghurt.
- Microwave Biscoff/almond butter for 10–15 secs, drizzle on top, and enjoy!
