COCONUT LEMON WEET-BIX SLICE
INGREDIENTS
FOR THE BASE:
- 7 crushed Weet-Bix
- 2 scoops (60 g) Happy Way Like A Vegan Vanilla Protein Powder
- 1/4 cup shredded coconut
- Juice of half a lemon
- 1/4 cup maple syrup or syrup of choice
- 1/3 cup almond milk
FOR THE TOPPING:
- 1 cup light coconut cream
- 1/4 cup maple syrup
- Juice of 1 lemon
- 1/4 cup shredded coconut
METHOD
- Combine all the base ingredients in a mixing bowl and pat down on a lined tray.
- Combine the topping ingredients in another bowl and spread on top of base.
- Set in the fridge overnight and then slice into 10 squares—enjoy!
