CRISPY DATE & CRANBERRY PROTEIN SLICE

INGREDIENTS

  • 1/4 cup Happy Way double choc chip protein⁠
  • 80g dates ⁠
  • 3 cups rice crisps⁠
  • 1/4 cup cranberries⁠
  • 1/2 cup natural peanut butter (runny)⁠
  • 1/4 cup honey⁠
  • 180g block chocolate to melt⁠

METHOD

  1. Soak dates in hot water for 10 mins, then blend with some of the water. Toss in cranberries and blend again.⁠
  2. Mix peanut butter and honey in a bowl until smooth.⁠
  3. Stir in rice crisps, date & cranberry mix, and protein powder until combined.⁠
  4. Press the mix into a lined brownie tin, flatten with a spatula.⁠
  5. Melt chocolate, drizzle on top, then chill in the fridge for an hour. Slice and enjoy!
