CRISPY PISTACHIO CHOCOLATE PROTEIN CUPS

INGREDIENTS

  • 1 scoop Happy Way Vanilla Protein ⁠Powder
  • 1 cup soy protein crisps⁠
  • 50g hulled tahini ⁠
  • 50g pistachio spread, melted ⁠
  • 1/4 cup maple syrup⁠
  • Dark chocolate, melted⁠
  • Pistachios, crushed ⁠

METHOD

  1. Mix all the ingredients together in a bowl until well combined.⁠
  2. Spoon the mixture into a mini cupcake mould and press down until fully packed.⁠
  3. Melt dark chocolate in the microwave for 30 seconds.⁠
  4. Cover the top with chocolate and crushed pistachios and refrigerate until firm.⁠ ⁠
  5. Remove from mould and enjoy!⁠
