INGREDIENTS
For the cookie dough:
- 100g unsalted butter
- ¼ cup white sugar
- ¼ cup brown sugar
- 1 egg
- ¾ cup white flour
- 1 scoop Happy Way Vanilla Protein Powder
- ¼ cup dark choc chips
- 1 tsp vanilla paste
- Pinch of salt
For the brownie:
- 1 sugar-free fudgey brownie mix
- 110g unsalted butter, melted
- 1 egg
- ¼ cup water
METHOD
- Preheat the oven to 160c.
- Prepare the cookie dough layer. In a large bowl, cream together the butter, sugar, egg and vanilla paste.
- Add the flour, protein and salt and stir until just combined.
- Fold in the chocolate chips and set aside.
- In a separate bowl, make the brownie layer according to package instructions.
- Line a square baking tray and add the brownie mixture. Top with the cookie mixture and bake for 30-35 minutes.
- Cool completely before serving and enjoy!
