HIGH-PROTEIN BROOKIE

INGREDIENTS

For the cookie dough:⁠

  • 100g unsalted butter⁠
  • ¼ cup white sugar⁠
  • ¼ cup brown sugar⁠
  • 1 egg⁠
  • ¾ cup white flour⁠
  • 1 scoop Happy Way Vanilla Protein Powder ⁠
  • ¼ cup dark choc chips ⁠
  • 1 tsp vanilla paste ⁠
  • Pinch of salt ⁠

For the brownie:⁠

  • 1 sugar-free fudgey brownie mix⁠
  • 110g unsalted butter, melted ⁠
  • 1 egg⁠
  • ¼ cup water⁠

METHOD

  1. Preheat the oven to 160c.
  2. Prepare the cookie dough layer. In a large bowl, cream together the butter, sugar, egg and vanilla paste. ⁠
  3. Add the flour, protein and salt and stir until just combined. ⁠
  4. Fold in the chocolate chips and set aside. ⁠
  5. In a separate bowl, make the brownie layer according to package instructions. ⁠
  6. Line a square baking tray and add the brownie mixture. Top with the cookie mixture and bake for 30-35 minutes.⁠
  7. Cool completely before serving and enjoy!
