INGREDIENTS
- 1 1/2 cups almond meal (finely ground)
- 1 scoop (30g) Happy Way vanilla protein powder
- 1/2 tsp baking powder
- Pinch of salt
- 1 large egg
- 1/4 cup maple syrup
- 2 tbsp peanut butter
- 2 tbsp melted butter
- 1 tsp vanilla bean extract
- 1/2 cup dark choc baking chips
METHOD
- Preheat oven to 180°C (fan) and line a baking tray.
- Mix almond meal, protein powder, baking powder and salt.
- Add egg, maple syrup, nut butter, melted butter and vanilla. Mix well.
- Fold through chocolate chips, then chill dough for 30 mins.
- Scoop into balls, place on tray and gently flatten.
- Bake for 10–12 mins. Enjoy!
