HIGH PROTEIN CAKEY COOKIES

INGREDIENTS 

  • 1 1/2 cups almond meal (finely ground)⁠
  • 1 scoop (30g) Happy Way vanilla protein powder⁠
  • 1/2 tsp baking powder⁠
  • Pinch of salt⁠
  • 1 large egg⁠
  • 1/4 cup maple syrup⁠
  • 2 tbsp peanut butter⁠
  • 2 tbsp melted butter⁠
  • 1 tsp vanilla bean extract⁠
  • 1/2 cup dark choc baking chips

METHOD

  1. Preheat oven to 180°C (fan) and line a baking tray.⁠
  2. Mix almond meal, protein powder, baking powder and salt.⁠
  3. Add egg, maple syrup, nut butter, melted butter and vanilla. Mix well.⁠
  4. Fold through chocolate chips, then chill dough for 30 mins.
  5. Scoop into balls, place on tray and gently flatten.⁠
  6. Bake for 10–12 mins. Enjoy!⁠
