INGREDIENTS
- 90g rolled or quick oats
- 1 tsp baking powder
- 1 scoop Happy Way Strawberry Protein Powder
- ¼ tsp ground cinnamon
- Pinch of salt
- 1 egg
- 180ml milk
- 1 tbsp coconut oil, melted
- 25g white chocolate chips
- 3 fresh strawberries, sliced
- 2 tbsp flaked almonds, for topping
METHOD
- Preheat oven to 175°C. In a blender, combine oats, baking powder, protein powder, cinnamon, salt, egg, milk and melted coconut oil. Blend until smooth
- Pour the batter into a small baking dish (approx. 13cm x 13cm). Top with sliced strawberries, white chocolate chips and flaked almonds.
- Bake for 25-30 minutes, or until golden and a skewer inserted in the centre comes out clean.
- Remove from the oven and serve between two, with optional high-protein vanilla yoghurt.
