HIGH PROTEIN STRAWBERRY SHORTCAKE BAKED OATS

INGREDIENTS 

  • 90g rolled or quick oats
  • 1 tsp baking powder
  • 1 scoop Happy Way Strawberry Protein Powder
  • ¼ tsp ground cinnamon
  • Pinch of salt
  • 1 egg
  • 180ml milk 
  • 1 tbsp coconut oil, melted
  • 25g white chocolate chips
  • 3 fresh strawberries, sliced
  • 2 tbsp flaked almonds, for topping

METHOD

  1. Preheat oven to 175°C. In a blender, combine oats, baking powder, protein powder, cinnamon, salt, egg, milk and melted coconut oil. Blend until smooth
  2. Pour the batter into a small baking dish (approx. 13cm x 13cm). Top with sliced strawberries, white chocolate chips and flaked almonds.
  3. Bake for 25-30 minutes, or until golden and a skewer inserted in the centre comes out clean.
  4. Remove from the oven and serve between two, with optional high-protein vanilla yoghurt.
