INGREDIENTS
- 1/4 cup chia seeds
- 1 cup full-fat coconut milk
- 1 tsp matcha powder
- 1/2 tsp vanilla extract
- 2 tbsp maple syrup
OPTIONAL TOPPING
- Greek yoghurt

METHOD
- Whisk all the pudding ingredients together in a bowl until well combined. Let sit for 2-3 minutes then mix again. The mixture should thicken slightly and become viscous.
- Cover and place in the fridge for at least two hours before serving or if you have time, overnight.
