INGREDIENTS
- 100g rolled oats
- 70g macadamia nuts, roughly chopped
- 30g Happy Way Matcha Latte Whey Protein Powder
- 2 tbsp maple syrup
- 50g desiccated coconut
- 2 tsp hemp seeds
- 3 tbsp coconut oil
- 4 tbsp honey
- Pinch of salt
- 2 tbsp milk
- 60g almond butter
- 1 tsp vanilla extract
- 75 g white chocolate
- 1 tsp Happy Way Matcha Green Tea Powder
METHOD
- In a large bowl, combine oats, macadamia nuts, protein powder, desiccated coconut, hemp seeds and a pinch of salt.
- Stir in maple syrup, vanilla extract and almond butter. Add milk gradually if the mixture feels too dry - it should be sticky enough to hold together when pressed.
- Line a loaf tin with baking paper and press the mixture firmly into the tray.
- Melt white chocolate and drizzle over the top, then dust the matcha powder on top. Refrigerate for 1 hour, then slice into bars and store in an airtight container in the fridge for up to a week.
