INGREDIENTS
For the Nutella + Raspberry
- 1 egg
- 35ml low fat milk
- 100g plain Greek yoghurt
- 40g Happy Way Chocolate Protein Pancake Mix
- ½ tsp baking powder
- 100g frozen raspberries
- 15g Nutella
For the White Chocolate + Blueberry
- 1 egg
- 35ml low fat milk
- 100g plain Greek yoghurt
- 40g Happy Way Vanilla Protein Pancake Mix
- ½ tsp baking powder
- 100g frozen blueberries
- 15g white chocolate chips
METHOD
- Preheat the oven to 180°C and lightly oil a small oven-proof container.
- Add the egg, milk, and 50g of the yoghurt to the container. Mix until well combined.
- Add your choice of Happy Way Protein Pancake Mix and baking powder, then mix until well combined and no streaks remain.
- Stir through your toppings.
- Bake for 20–25 minutes, until golden and cooked through (a skewer inserted into the centre should come out clean).
- Top with the remaining yoghurt and extra toppings, then enjoy!
