WET INGREDIENTS

  • 3 overripe banana (I know, mine are very overripe 😅)
  • 1/3 cup maple syrup (I used sugar free)
  • 1 egg
  • 1/4 cup EVOO
  • 1/4 cup milk (I used macadamia)


DRY INGREDIENTS

  • 1 & 1/4 cup of plain flour
  • 1/4 cup almond flour
  • 1/4 cup @happywayau flavourless protein
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • pinch sea salt

ICING

  • 6 tbsp of thick Greek yoghurt (I used Jalna)
  • 6 tsps of @happywayau vanilla protein powder
  • cinnamon to taste (around 1/2 - 1 tsp)
  • flaked almonds (to top)

METHOD

  1. Mix all icing ingredients together until smooth and set aside. 
  2. Pre-heat the oven to 180 degrees.
  3. Mix all wet ingredients.
  4. Add in dry ingredients and gently mix until just combined.
  5. Place mixture into a greased mini loaf tray.
  6. Cook on 180 for 20-25 mins (until cooked through).
  7. Enjoy right away OR allow to cool completely and top with icing and sprinkle with flaked almonds.
  8. ENJOY
