MINI BANANA BREAD LOAVES
WET INGREDIENTS
- 3 overripe banana (I know, mine are very overripe đ )
- 1/3 cup maple syrup (I used sugar free)
- 1 egg
- 1/4 cup EVOO
- 1/4 cup milk (I used macadamia)
DRY INGREDIENTS
- 1 & 1/4 cup of plain flour
- 1/4 cup almond flour
- 1/4 cup @happywayau flavourless protein
- 1 tsp baking soda
- 1 tsp cinnamon
- pinch sea salt
ICING
- 6 tbsp of thick Greek yoghurt (I used Jalna)
- 6 tsps of @happywayau vanilla protein powder
- cinnamon to taste (around 1/2 - 1 tsp)
- flaked almonds (to top)
METHOD
- Mix all icing ingredients together until smooth and set aside.Â
- Pre-heat the oven to 180 degrees.
- Mix all wet ingredients.
- Add in dry ingredients and gently mix until just combined.
- Place mixture into a greased mini loaf tray.
- Cook on 180 for 20-25 mins (until cooked through).
- Enjoy right away OR allow to cool completely and top with icing and sprinkle with flaked almonds.
- ENJOY
