INGREDIENTS
  • 1 & 1/2 cups of almond flour
  • 1/2 cup of Flavourless Protein Powder
  • 1 cup of oat flour (I blended oats)
  • 1/2 cup of classic monk fruit sweetener
  • 1/2 tsp baking soda
  • 1 & 1/2 heaped tbsp cacao powder
  • pinch of sea salt
  • 3 eggs, beaten
  • 1/2 cup of coconut oil
  • 1/4 cup of plant milk (I used macadamia)
  • 1 tsp pure vanilla extract
  • white choc chips (as many as you want - I use Noshu sugar free)

METHOD

  1. Line a square brownie tin with baking paper and pre-heat the oven to 180 degrees.
  2. Mix all of the dry ingredients together (except cacao powder).
  3. In a seperate bowl, mix all of the wet ingredients together (except choc chips) until smooth.
  4. Add both mixtures together and mix until combined.
  5. Add half the mixture to the bottom of the prepared baking tin. Spread out with back of a spoon or spatula.
  6. Then add the cacao powder to the remaining mixture and mix.
  7. Spread this mixture onto the blondie layer then top with choc chips.
  8. Bake in the oven until cooked through ~ 20 minutes, however depends on your oven.
  9. Cut into squares and enjoy warm with a coffee or tea!
