INGREDIENTS 

FOR THE CAKE 

  • 1/2 cup oat flour
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup pumpkin purée
  • 1/2 cup banana, mashed 
  • 1/3 cup almond milk
  • 1 flax egg (1tbsp ground flax + 2.5tbsp water)
  • 1/2 cup coconut sugar
  • 2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1 tsp vanilla

FOR THE FROSTING 

METHOD 

  1. Preheat oven to 180°C and grease or line a baking tray. 
  2. In two separate bowls, combine dry and wet ingredients. 
  3. Pour the wet mixture into the dry mixture and stir till just combined. 
  4. Transfer the batter to the baking pan and bake for 35-40mins.
  5. Allow the cake to cool for at least 20 minutes before frosting. 
  6. Prepare the frosting by combining all the ingredients until smooth.
  7. Spread the frosting over the cake and enjoy!
