PUMPKIN SNACK CAKE
INGREDIENTS
FOR THE CAKE
- 1/2 cup oat flour
- 1 cup almond flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup pumpkin purée
- 1/2 cup banana, mashed
- 1/3 cup almond milk
- 1 flax egg (1tbsp ground flax + 2.5tbsp water)
- 1/2 cup coconut sugar
- 2 tsp pumpkin pie spice
- 1/4 tsp salt
- 1 tsp vanilla
FOR THE FROSTING
- 1/2 cup greek yogurt
- 1/4 cup almond butter
- 2 tbsp pumpkin purée
- 2 tbsp maple syrup
- 1/2 tsp pumpkin spice
- 1 scoop (30 g) Happy Way Like A Vegan Vanilla Protein Powder
METHOD
- Preheat oven to 180°C and grease or line a baking tray.
- In two separate bowls, combine dry and wet ingredients.
- Pour the wet mixture into the dry mixture and stir till just combined.
- Transfer the batter to the baking pan and bake for 35-40mins.
- Allow the cake to cool for at least 20 minutes before frosting.
- Prepare the frosting by combining all the ingredients until smooth.
- Spread the frosting over the cake and enjoy!
