INGREDIENTS

2 cups walnuts
- 2 cups pitted dates (soaked in boiled water for 15 mins or until softened)
- 1/2 cup desiccated coconut
- 3 scoops Happy Way Vegan Double Choc Chip Protein Powder
- 3 tbsp cacao powder
- 2 tsp vanilla extract
- Melted dark chocolate, for drizzling (optional)
METHOD
- Once dates have softened, keep 3 tbsp of the soaking water and discard the rest.
- Add all ingredients, including dates and the soaking water, to a blender and blend until smooth. Add more water if needed to blend.
- Roll into balls and drizzle with melted dark chocolate.
- Place in the freezer for 1 hour to set and enjoy!
