SNICKERS DATE BAR

INGREDIENTS 

  • 1 punnet (450g) medjool dates⁠
  • 3 heaped tbsp natural peanut butter⁠
  • 1 scoop Happy Way Flavourless vegan protein
  • 100g dark chocolate⁠
  • 1 tbsp coconut oil⁠
  • Crushed peanuts for topping, optional ⁠

METHOD

  1. Arrange the pitted dates on a lined tray, and firmly press down with the bottom of a cup. ⁠
  2. Combine protein and peanut butter with 3-4 tbsp almond milk to form a thick mixture. Spoon over the date layer and press down evenly.⁠
  3. Melt the dark chocolate and coconut oil together and pour over the peanut butter layer.
  4. Top with crushed peanuts and place in the freezer to set for 2-3 hours.
