INGREDIENTS
- 1 punnet (450g) medjool dates
- 3 heaped tbsp natural peanut butter
- 1 scoop Happy Way Flavourless vegan protein
- 100g dark chocolate
- 1 tbsp coconut oil
- Crushed peanuts for topping, optional
METHOD
- Arrange the pitted dates on a lined tray, and firmly press down with the bottom of a cup.
- Combine protein and peanut butter with 3-4 tbsp almond milk to form a thick mixture. Spoon over the date layer and press down evenly.
- Melt the dark chocolate and coconut oil together and pour over the peanut butter layer.
- Top with crushed peanuts and place in the freezer to set for 2-3 hours.
