VANILLA, ALMOND & FIG CAKE
INGREDIENTS
- 1/2 cup applesauce
- 1/4 cup coconut oil, melted
- 1/3 cup maple syrup
- 1 tsp almond extract
- 1 tsp vanilla extract
- 1 tsp apple cider vinegar
- 2 1/2 cups almond meal
- 1 scoop (30 g) Happy Way Like A Vegan Vanilla Protein Powder
- 1/2 tsp baking soda
- Pinch salt
- 4 ripe figs, sliced
METHOD
- Preheat the oven to 180°C and line an 8 inch round tin with baking paper.
- Add all the ingredients, besides the figs, into a mixing bowl and combine with electric mixer until well blended.
- Arrange the sliced figs in the bottom of the cake tin, pouring the cake batter over the top.
- Bake for approx. 30-35 minutes or until golden brown.
- Remove and let cool in the tin for 20 minutes before transferring onto a wire rack to cool further.
- Slice and enjoy!
