INGREDIENTS

  • 1/2 cup applesauce
  • 1/4 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 2 1/2 cups almond meal
  • 1 scoop (30 g) Happy Way Like A Vegan Vanilla Protein Powder
  • 1/2 tsp baking soda
  • Pinch salt
  • 4 ripe figs, sliced

METHOD

  1. Preheat the oven to 180°C and line an 8 inch round tin with baking paper.
  2. Add all the ingredients, besides the figs, into a mixing bowl and combine with electric mixer until well blended.
  3. Arrange the sliced figs in the bottom of the cake tin, pouring the cake batter over the top.
  4. Bake for approx. 30-35 minutes or until golden brown.
  5. Remove and let cool in the tin for 20 minutes before transferring onto a wire rack to cool further. 
  6. Slice and enjoy!
