VANILLA, COCONUT & LIME PROTEIN BALLS
- 1 Cup Raw Cashew nuts
- 1 Cup Desiccated Coconut + Extra to roll
- ½ Cup Dates
- 1 Lime, Juiced
- 2 Tablespoons Coconut Oil, melted
- 2 Teaspoons Rice Malt Syrup
- 1 Tablespoon Happy Way Vanilla Protein Powder
- Soak Dates in warm water for 20 minutes until soft
- Add cashew nuts into a food processor and blend until cashew meal consistency
- Add remaining ingredients into food processor and blend until well combined
- Roll tablespoon amounts of mixture into balls and coat in desiccated coconut
- Place balls in the fridge to set for approximately 30 minutes before eating. Enjoy!
