VANILLA, COCONUT & LIME PROTEIN BALLS

  • 1 Cup Raw Cashew nuts
  • 1 Cup Desiccated Coconut + Extra to roll
  • ½ Cup Dates
  • 1 Lime, Juiced
  • 2 Tablespoons Coconut Oil, melted
  • 2 Teaspoons Rice Malt Syrup
  • 1 Tablespoon Happy Way Vanilla Protein Powder
  1. Soak Dates in warm water for 20 minutes until soft
  2. Add cashew nuts into a food processor and blend until cashew meal consistency
  3. Add remaining ingredients into food processor and blend until well combined
  4. Roll tablespoon amounts of mixture into balls and coat in desiccated coconut
  5. Place balls in the fridge to set for approximately 30 minutes before eating. Enjoy!
