VANILLA PROTEIN PANCAKE TACOS
INGREDIENTS
- 1 packet of Happy Way Vanilla Buttermilk Protein Pancake Mix
- 320ml milk or water
For the toppings:
- Greek yoghurt
- Fresh berries (your choice of strawberries, blueberries, or mixed berries)
- Peanut butter
- Coconut flakes
METHOD
- In a large bowl, combine the entire packet of Happy Way Vanilla Buttermilk Protein Pancake Mix with milk or water then whisk until smooth.
- Heat a non-stick pan over medium heat. Lightly grease with cooking spray or a small amount of oil. Pour small amounts of batter into the pan to form pancakes. Cook each side for 2-3 minutes or until golden brown. Repeat until all pancakes are cooked.
- To assemble, fold each pancake gently into a taco shape, then add your favourite toppings. We opted for Greek yoghurt, berries, peanut butter and coconut flakes and enjoy!
