VEGAN GINGERBREAD BANANA BREAD
INGREDIENTS
- 1 1/2 cup plain flour
- 1/4 cup Vegan Vanilla protein powder
- 1tsp baking soda
- 1/2tsp baking powder
- 1tsp cinnamon
- 1/4tsp ginger
- 1/3 cup coconut sugar
- 1/4 cup molasses
- 1 1/3 cup overripe mashed banana
- 1/4 cup almond milk
- 1tsp vanilla
METHOD
- Preheat oven to 180C and line a loaf pan with parchment paper
- Mash bananas in a large bowl. Then stir in all wet ingredients
- Add in dry ingredients and stir till combined
- Transfer batter to lined loaf pan
- Bake 45-55mins or until toothpick comes out clean
- Let cool in pan 15mins, then transfer to a wire rack to cool completely. Top with melted coconut butter, slice and enjoy!
