Vegan Reese's Inspired PB Protein Cups

INGREDIENTS 

METHOD 

  1. Melt chocolate and coconut oil in a microwave-safe bowl, heating in 30-second bursts and stirring until smooth.
  2. In a medium bowl, mix peanut butter, maple syrup, vanilla, coconut flour, and protein powder. The mixture should be thick enough to roll, if too wet, add 1–2 tbsp more coconut flour.
  3. Line a muffin tin with paper or silicone baking cups. Pour a thin layer of melted chocolate to cover the bottom of each cup.
  4. Roll tbsp sized balls of the peanut butter mixture and place one in each cup. 
  5. Cover each ball with more melted chocolate until each cup is 3/4 full. 
  6. Freeze for about 30 minutes or until set and enjoy!
