INGREDIENTS
- 3/4 cup natural peanut butter
- 1 scoop Happy Way Choc Peanut Butter Vegan Protein Powder
- 1/4 cup pure maple syrup
- 3/4 cup oat flour (blended rolled oats)
- 1 tsp vanilla extract
- 1 cup dairy-free chocolate chips
- 1 tsp coconut oil
- Sea salt to top
METHOD
- Melt chocolate and coconut oil in a microwave-safe bowl, heating in 30-second bursts and stirring until smooth.
- In a medium bowl, mix peanut butter, maple syrup, vanilla, coconut flour, and protein powder. The mixture should be thick enough to roll, if too wet, add 1–2 tbsp more coconut flour.
- Line a muffin tin with paper or silicone baking cups. Pour a thin layer of melted chocolate to cover the bottom of each cup.
- Roll tbsp sized balls of the peanut butter mixture and place one in each cup.
- Cover each ball with more melted chocolate until each cup is 3/4 full.
- Freeze for about 30 minutes or until set and enjoy!
