
WHITE CHOC MANGO MUFFINS (GF/DF)
INGREDIENTS
- 1.5 cup almond meal
- 1/4 cup plain gluten free flour
- 1/4 cup vegan @happywayau flavourless protein (DC // HAPPYELISE ✨)
- 1/2 cup coconut sugar
- 1 tsp baking powder
- Salt
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup olive oil
- 1/2 cup almond milk
- 1 mango, chopped
- 1/2 cup white choc chips (I used dairy free)
- Handful of chopped Macadamias
METHOD
- Preheat your oven to 180 degrees fan-forced.
- Add all the dry ingredients to a mixing bowl and combine.
- Add in the remaining wet ingredients and stir well until everything is combined.
- Fold in the chopped mango, choc chips and macadamias.
- Spoon into lined or greased muffin tins (makes 9).
- Bake for 22-25 mins.
- Allow to cool for 10 mins before removing from the muffin moulds.
