INGREDIENTS
- 1 cup wholemeal self-raising flour
- 1 scoop (30g) Happy Way White Choc Caramel Protein Powder
- ½ tsp baking powder
- ¼ cup honey
- ¾ cup Greek yoghurt (or dairy-free alternative)
- 2 eggs
- ¼ cup melted coconut oil (or olive oil)
- ½ cup milk of choice
- ¾ cup frozen or fresh raspberries
- 30g white chocolate chips
METHOD
- Preheat oven to 180°C and line a muffin tray.
- Mix all dry ingredients in one bowl, whisk wet ingredients in another.
- Combine wet + dry until just mixed.
- Gently fold through raspberries and white choc chips.
- Divide into cases and bake for 18–22 mins until golden. Cool slightly and enjoy!
