WHITE CHOC RASPBERRY MUFFINS

INGREDIENTS

  • 1 cup wholemeal self-raising flour 
  • 1 scoop (30g) Happy Way White Choc Caramel Protein Powder ⁠
  • ½ tsp baking powder ⁠
  • ¼ cup honey 
  • ¾ cup Greek yoghurt (or dairy-free alternative) ⁠
  • 2 eggs
  • ¼ cup melted coconut oil (or olive oil)
  • ½ cup milk of choice ⁠
  • ¾ cup frozen or fresh raspberries 
  • 30g white chocolate chips 

METHOD

  1. Preheat oven to 180°C and line a muffin tray.⁠
  2. Mix all dry ingredients in one bowl, whisk wet ingredients in another.⁠
  3. Combine wet + dry until just mixed.⁠
  4. Gently fold through raspberries and white choc chips.⁠
  5. Divide into cases and bake for 18–22 mins until golden. Cool slightly and enjoy!⁠
