INGREDIENTS 

  • 2 eggs
  • 170g peanut or almond butter
  • 80g caster sugar
  • 1 tsp vanilla extract
  • 50g Happy Way White Choc Raspberry or Vanilla Whey Protein Powder
  • 105g plain flour
  • ½ tsp bicarb soda
  • Pinch of sea salt
  • 90g white chocolate chips
  • 90g frozen raspberries

METHOD 

  1. Preheat the oven to 170°C and line a baking tray with parchment paper. In a large bowl, whisk together eggs, sugar, peanut (or almond) butter, and vanilla until smooth.
  2. Stir in the protein powder, plain flour, bicarb soda and salt. Fold in the chocolate chips and raspberries.
  3. Spoon the mixture into balls on the baking tray (they’ll spread a bit!). Bake for 9-10 minutes until golden, then cool for 15 minutes and enjoy!
