
WHITE CHOC RASPBERRY PROTEIN COOKIES
INGREDIENTS
- 2 eggs
- 170g peanut or almond butter
- 80g caster sugar
- 1 tsp vanilla extract
- 50g Happy Way White Choc Raspberry or Vanilla Whey Protein Powder
- 105g plain flour
- ½ tsp bicarb soda
- Pinch of sea salt
- 90g white chocolate chips
- 90g frozen raspberries
METHOD
- Preheat the oven to 170°C and line a baking tray with parchment paper. In a large bowl, whisk together eggs, sugar, peanut (or almond) butter, and vanilla until smooth.
- Stir in the protein powder, plain flour, bicarb soda and salt. Fold in the chocolate chips and raspberries.
- Spoon the mixture into balls on the baking tray (they’ll spread a bit!). Bake for 9-10 minutes until golden, then cool for 15 minutes and enjoy!
