APPLE CARAMEL HOT CROSS BUN PUDDING
Bought too many buns? Whip up this HOT CROSS BUN PUDDING by @ever_so_fit for an ooey-gooey delight that’s sure to impress everyone!
INGREDIENTS
FOR THE BASE:
- 6 apple & cinnamon hot cross buns
- 6 whole eggs
- 8 egg whites
- 1 can evaporated milk
- 100g @happywayau Vanilla Protein
- 1 tsp. vanilla bean paste
FOR THE TOPPING:
- 5 tbsp maple syrup
- 4 tbsp butter, melted
- 1/4 cup brown sugar
- 1 tsp. vanilla bean paste
METHOD
- Preheat oven to 160C.
- Cut 6 apple & cinnamon hot cross buns into small cubes. Place into a baking dish and set aside.
- In a medium bowl, mix together melted butter, maple syrup, coconut sugar, vanilla bean paste and whisk until smooth.
- In a separate bowl, whisk together evaporated milk and protein. Once fully incorporated, mix in eggs, egg whites and vanilla bean paste.
- Pour egg mixture over top of hot cross buns then drizzle caramel topping mixture. Cover and refrigerate (4-8 hrs)
- Bake uncovered for 30-45 minutes until golden brown and serve with ice cream and caramel sauce.
