Bought too many buns? Whip up this HOT CROSS BUN PUDDING by @ever_so_fit for an ooey-gooey delight that’s sure to impress everyone!

INGREDIENTS

FOR THE BASE:

  • 6 apple & cinnamon hot cross buns
  • 6 whole eggs
  • 8 egg whites
  • 1 can evaporated milk
  • 100g @happywayau Vanilla Protein 
  • 1 tsp. vanilla bean paste

 

FOR THE TOPPING:

  • 5 tbsp maple syrup
  • 4 tbsp butter, melted 
  • 1/4 cup brown sugar 
  • 1 tsp. vanilla bean paste

 

METHOD

  1. Preheat oven to 160C.
  2. Cut 6 apple & cinnamon hot cross buns into small cubes. Place into a baking dish and set aside.
  3. In a medium bowl, mix together melted butter, maple syrup, coconut sugar, vanilla bean paste and whisk until smooth. 
  4. In a separate bowl, whisk together evaporated milk and protein. Once fully incorporated, mix in eggs, egg whites and vanilla bean paste.
  5. Pour egg mixture over top of hot cross buns then drizzle caramel topping mixture. Cover and refrigerate (4-8 hrs)
  6. Bake uncovered for 30-45 minutes until golden brown and serve with ice cream and caramel sauce.
