BERRY PROTEIN SLICE
INGREDIENTS
FOR THE BASE:
- 1 cup pitted dates
- 2 cup almond flour
- 1/2 cup coconut oil
- 1/2 cup Happy Way Organic Cacao Powder
FOR THE BERRY LAYER:
- 1 cup desiccated coconut
- 1 cup raspberries
- 1 scoop (30 g) Happy Way I Love You Berry Much Whey Protein Powder
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 1 block 70% dark chocolate
METHOD
- In a food processor or high-speed blender mix together the base layer ingredients to form a fudge-like biscuit consistency. Place in a lined baking tray as the first layer of the slice.
- In a medium bowl, mash your raspberries and then add the coconut, protein, coconut oil and maple syrup. Place this mixture on top of the base layer.
- Melt your dark chocolate in the microwave for 30 seconds-1 minute and pour on top of the two layers. Place the slice into the fridge to set for 2 hours and enjoy!
