GLUTEN FREE & VEGAN SWEET POTATO BROWNIES
INGREDIENTS
- 1 cup sweet potato purée
- 1/2 cup peanut butter
- 1/4 cup applesauce
- 1 tsp vanilla
- 1/3 cup coconut sugar
- 1/3 cup Organic Cacao Powder
- 1/2 cup oat flour
- 1/2 tsp baking powder
- Pinch salt
- 1/4 cup chocolate chips
METHOD
- Preheat oven to 180c and line an 8x8 pan with parchment paper
- Combine sweet potato with wet ingredients
- Add in dry ingredients, except chocolate chips and stir till combine
- Transfer batter to prepared pan and top with chocolate chips

Bake 25-28mins. Then let cool in pan ~1hr. Slice and enjoy!
