HEALTHIER POTATO SALAD
INGREDIENTS
- 1 kg cooked potatoes, cut in 1” square cubes
- 350g Greek Yogurt
- 2 Tablespoons seasoned rice wine vinegar
- 2 Tablespoons grain mustard
- 30g @happywayau flavourless whey protein
- 2 Tablespoons sea salt flakes
- 1 teaspoons smoked paprika
- 1/2 teaspoons cracked black pepper
- 1 bunch of dill roughly chopped
- 1 bunch of parsley roughly chopped
- 1 small red onion, diced
METHOD
- Place spud light potatoes in a large pot.
- Fill pot water and bring to the boil.
- Boil spud light potatoes for 15 -20 minutes making sure you don’t over cook the potatoes.
- While potatoes are cooking, make the yogurt dressing base.
- In a medium mixing bowl mix together high protein yogurt, rice wine vinegar, mustard, @happywayau unflavored protein and seasonings until well combined.
- Set aside.
- Drain the potatoes from pot and allow them cool down for 30 minutes. Once complete cooled cut into 1” cubes.
- Place potatoes into a large mixing bowl add the yogurt dressing, fresh chopped dill, red onion and fresh parsley.
- Mix until will combined and top with fresh herbs and sea salt flakes.
