INGREDIENTS

  • 1 kg cooked potatoes, cut in 1” square cubes
  • 350g Greek Yogurt
  • 2 Tablespoons seasoned rice wine vinegar
  • 2 Tablespoons grain mustard
  • 30g @happywayau flavourless whey protein
  • 2 Tablespoons sea salt flakes
  • 1 teaspoons smoked paprika
  • 1/2 teaspoons cracked black pepper
  • 1 bunch of dill roughly chopped
  • 1 bunch of parsley roughly chopped
  • 1 small red onion, diced

METHOD

  1. Place spud light potatoes in a large pot.
  2. Fill pot water and bring to the boil.
  3. Boil spud light potatoes for 15 -20 minutes making sure you don’t over cook the potatoes.
  4. While potatoes are cooking, make the yogurt dressing base.
  5. In a medium mixing bowl mix together high protein yogurt, rice wine vinegar, mustard, @happywayau unflavored protein and seasonings until well combined.
  6. Set aside.
  7. Drain the potatoes from pot and allow them cool down for 30 minutes. Once complete cooled cut into 1” cubes.
  8. Place potatoes into a large mixing bowl add the yogurt dressing, fresh chopped dill, red onion and fresh parsley.
  9. Mix until will combined and top with fresh herbs and sea salt flakes.
