INGREDIENTS

  • 1 & 1/2 cups rolled oats
  • 3/4 cup of a fruit + nut mix (I used one with cranberries, prunes, roasted almonds & hazelnuts)
  • 1/4 cup of Happy Way Vanilla Whey Protein Powder
  • 1-2 tsp of cinnamon (or add a mix of cinnamon, nutmeg & ginger)
  • 3 tbs pure maple syrup
  • 2 & 1/2 tbs extra virgin olive oil
  • 2 heaped tbs smooth peanut butter
  • Pinch of sea salt
  • 2 rows of dark chocolate, chopped

METHOD

  1. Preheat oven to 160.
  2. Mix all ingredients together then lay out on a lined baking sheet.
  3. Cook until golden (around 15 mins). 
  4. Allow to cool before breaking apart and transferring into an airtight container/jar.
Adding some protein powder not only adds a delicious flavour to the granola but also increases the protein content a bit which keeps you feeling fuller ☺️
