RAFFAELLO INSPIRED PROTEIN CUPS
- 1 cup of puffed quinoa
- 1/4 cup maple syrup
- 1/4 cup coconut cream
- 1/2 cup shredded coconut
- 1/3 cup of Happy Way Vegan Vanilla Protein Powder.
- 1 x block of white chocolate
- 2 x tablespoons of coconut oil
- In a bowl add the puffed quinoa, maple syrup, coconut cream, shredded coconut, and Happy Way Vanilla Protein Powder. Mix them together.
- Place a tablespoon of mixture into each muffin paper.
- Place them into the fridge for 30 minutes until mixture is set.
- In a small bowl add the white chocolate and coconut oil and melt in the microwave for 1 minute.
- Add the chocolate mixture on top of the set coconut mixture and place in the fridge again until set.
