INGREDIENTS 

  • 1 cup of puffed quinoa
  • 1/4 cup maple syrup
  • 1/4 cup coconut cream
  • 1/2 cup shredded coconut
  • 1/3 cup of Happy Way Vegan Vanilla Protein Powder.
  • 1 x block of white chocolate
  • 2 x tablespoons of coconut oil

METHOD

  1. In a bowl add the puffed quinoa, maple syrup, coconut cream, shredded coconut, and Happy Way Vanilla Protein Powder. Mix them together.
  2. Place a tablespoon of mixture into each muffin paper.
  3. Place them into the fridge for 30 minutes until mixture is set.
  4. In a small bowl add the white chocolate and coconut oil and melt in the microwave for 1 minute.
  5. Add the chocolate mixture on top of the set coconut mixture and place in the fridge again until set.
